Recipe of the Week: Salmon Burgers

I am starting a new feature on my blog called “The Recipe of the Week.” The name should be self-explanatory, but just to make sure, every week I will post a recipe that not only tastes good but is also healthy. This week’s recipe is for all of the diehard football fans and tailgaters out there. Even though I’m not a big football fan, I want to give a “Go Bears” for their unbelievable comeback yesterday, since I am from Chicago. Anyway, back to the point, this weeks recipe is a quick easy alternative to the traditional burger that most guys cook up for the game.
Salmon has become one of the best foods you can eat since it has lots of good protein and essential fatty acids, also known as omega-3’s. Omega-3 fatty acids have lots of health benefits including increased brain function and the reduction of heart disease risk. I would recommend trying to eat salmon once a week. For those who claim not to like seafood, try to ease into it. Go in with an open mind and try different recipes. The health benefits of seafood are hard to pass up.
My two recommendations regarding the ingredients are to buy low sodium canned salmon. Anything that is canned uses salt as a preservative so it’s important to try to find a lower sodium option. The reduced sodium will reduce your risk of heart disease and also keep excess water out of your skin, which in the long run will better your chances of a six-pack. Also I would recommend using whole wheat bread crumbs and whole wheat bread. The whole wheat bread crumbs may be hard to come by from a store, but give it a try. The whole wheat buns should be easier to find. If possible I would recommend getting Ezekial brand buns. Ezekial products are by far the best bread you can get. I won’t eat any other bread. Ezekial bread is sprouted grain bread that doesn’t have any preservatives are other manufactured ingredients. It is a complete source of protein and has lots of fiber. You can usually find Ezekial products at health food stores like Whole Foods.
Salmon Burgers
1 3/4 cup dry bread crumbs
15 1/2 oz. canned red salmon, drained and bones discarded
10 3/4 oz can condensed low-sodium cream of mushroom soup
6 sandwich buns
Also: 2 eggs, 1 tsp onion powder, 1 tsp dried dill weed, 1/4 cup sweet pickle relish, nonstick cooking spray
How to make: Preheat the broiler. Place 1/2 cup bread crumbs in a shallow dish; set aside. In a medium bowl, combine the remaining ingredients except the cooking spray and buns; mix well. Form the mixture into 6 equal size 1/2″ thick patties. Coat the patties completely with the reserved bread crumbs and place on a rimmed baking sheet that has been coated with nonstick cooking spray. Spray the patties lightly with nonstick cooking spray and broil for 8 to 12 minutes, or until browned, turning halfway through the cooking. Serve on the buns.
Makes 6 burgers.
