Recipe of the Week: Sweet and Tangy Glazed Salmon

Seafood and salmon in particular have many different health benefits making it a great addition to anyone’s nutrition plan. Unfortunately, for the majority of people, seafood comes with a negative connotation. Most people don’t enjoy the taste of seafood for some reason or another. I agree that some seafood can taste really bad, but if prepared properly seafood can be a delicious and nutritious treat.
The first step to successfully eating seafood if you have and aversion to it is to open your mind to trying it. People automatically think they won’t like seafood, which programs their mind and body to dislike the dish. Instead be willing to try something new with the possibility of liking it. It would be a shame to live your entire life without enjoying some of the wonderful flavors that seafood offers.
Salmon is one of the healthiest foods you can eat. There is lots of protein and essential fatty acids that make salmon better than most other meats. Experts suggest eating at least one serving of salmon a week to get all of the omega-3 fatty acids found in salmon. People may look at the fat content of this dish and be turned off, don’t be. The majority of the fat is comprised of the omega-3’s which have many health benefits including reducing the risk of heart disease and improving brain function.
Any food can be made to taste good as long as you incorporate the right ingredients. Most people like the sweet taste of sugar so you can incorporate it into meals at times to improve the flavor of some dishes. Whenever you get any form of sugar try to get the least processed version, which will greatly reduce the harmful side-effects of eating sugar. Using a combination of other spices and ingredients, on top of the brown sugar, turns salmon from a fish that most people don’t enjoy the taste of to a delicious treat that anyone can enjoy.
Sweet and Tangy Glazed Salmon
6 tablespoons butter
1 1/2 cups brown sugar
4 1/2 tablespoons lemon juice
2 1/4 teaspoons dried dill weed
3/4 teaspoon ground cayenne pepper
1 pound salmon fillets, with skin
lemon pepper to tastes
1. Preheat an outdoor grill for high heat.
2. Melt the butter in a saucepan over medium heat, and mix in brown sugar, lemon juice, dill, and cayenne pepper. Cook and stir until the brown sugar is dissolved. Reduce heat and simmer until ready to brush onto the salmon.
3. Season salmon with lemon pepper, and place directly on the grill grate, skin side down. Brushing frequently with the butter and brown sugar glaze, cook the salmon for 20 minutes, or until easily flaked with a fork. Reserve some of the glaze for serving.
Makes 4 servings.
